I enjoy making Southwest egg rolls. They’re SO easy (and you know easy are the only recipes that fly in my Homestead kitchen!)

They’re a delicious Tex-Mex favorite around here, crispy on the outside with creamy chicken filling on the inside. I’m sharing skillet fry AND air fryer directions.

How Hard Is It To Make Homemade Egg Rolls?

Making any flavor of homemade egg rolls is incredibly easy. Just make a thick filling of some sort, roll them in a sheet of egg roll pastry and fry.

What Are Ingredients Of Southwest Egg Rolls?

Today I’m sharing how I make Southwest Egg Rolls. I’m sharing both skillet frying as well as healthier & lower fat air fryer instructions too!

You only need a few ingredients:

Chicken (I use drained canned chicken, but any leftover & shredded chicken will do here.)

Black Beans

Corn

Shredded Cheese

Minced red bell pepper & green onion

Egg Roll pastry (I found ’em in the store’s produce section)

Just plop some filling in the corner of an egg roll pastry, roll it up, seal the edges with a brush of water and fry ’em up!

How Do You Roll Up An Egg Roll Wrapper?

It’s super easy to roll up an egg roll, y’all!

Position an egg roll wrapper pastry to make a diamond shape with a point facing you.

Add 2-3 tablespoons of the chicken filling in the bottom third above the point closest to you.

Fold the bottom corner over the filling – line up the bottom corner with top corner.

Fold in both sides tucking filling in. Brush all inside edges with oil to help seal the egg roll as you roll.

Continue rolling the filling towards the top point until your egg roll is completely rolled.

Stack them seam-side down on a plate until you’re ready to cook them.

How Do You Fry Egg Rolls In A Skillet?

Here’s how I cook egg rolls on a stovetop: I take out my 10″ cast-iron skillet and add enough oil to cover the bottom. (about the same quantity of oil as if I were making french fries I suppose.)

When the oil is hot I carefully add my egg rolls seam-side down in a single layer in the hot grease.

I cook them for 2-3 minutes, then flip them and continue cooking until all surfaces are golden brown and crispy.

How Long Does It Take To Cook Egg Rolls In An Air Fryer?

I prefer to make these southwest egg rolls in my air fryer. There’s less grease, calories from fat and much less mess to clean up too!

Preheat the air fryer to 375ºF.

Brush entire surface of prepared egg rolls with oil. (Don’t skip – this is what makes them crispy!)

Place egg rolls in a single layer in your air fryer – seam side down.

Cook for 6 minutes until golden brown. Flip and cook another 5-6 minutes until egg rolls are fully brown & crisp.

Remove them from the air fryer and allow to cool slightly before serving.

What Dipping Sauces Go With Egg Rolls?

Since these egg rolls are Tex-Mex flavored, here are our favorite dipping sauces we enjoy with them:

Ranch Dressing – A good stand-by dipping sauce

Garlic Herb Sauce – Olive oil, garlic and fresh herbs blended together. Delightfully fresh!

Creamy Hatch Chile Sauce – Mildly spicy & creamy with a healthy yogurt base.

Can You Freeze Homemade Egg Rolls?

You might wonder if you can freeze leftover egg rolls. Of course you can!

Place cooked & cooled egg rolls on a rimmed baking sheet. Then freeze them for about 4 to 5 hours.

When they’re solidly frozen transfer frozen egg rolls to a heavy freezer bag (be sure to label). You can store them in the freezer for about 6 months.

How To Reheat Frozen Egg Rolls

You never want to reheat frozen egg rolls in the microwave, they’ll be soggy!

Instead you can crisp them by putting frozen egg rolls in your:

Air Fryer – 370º for 10-12 minutes, turning halfway through.

Oven – 400ºF for 15-20 minutes, turning halfway through.

Easiest Crispy Southwest Egg Rolls

These Southwest Egg rolls are crunchy on the outside with delicious chicken filling on the inside. Fry them either on the stovetop in a skillet or make them lower fat using your air fryer. Makes about 10-12 egg rolls. #TexasHomesteader

  • 10-12Egg roll wrappers (there were 18 egg roll wrappers in the package we bought)
  • 1cupCooked & shredded chicken (We use two 5-ounce cans of drained chicken)
  • ¼cupFrozen corn(can used drained canned corn)
  • ¼cupBlack beans, drained
  • 1/3cupFinely diced green onions
  • 1/2cupFinely diced red bell pepper
  • 1cupShredded cheese( Cheddar or Pepperjack are good options)
  • 1Jalapeno, seeded and finely chopped (optional)
  • ¼cupFinely chopped fresh cilantro
  • 1teaspoonChili powder
  • ½teaspoonCumin
  • ½teaspoonSalt (or to taste)
  • 1tablespoonOlive Oil for brushing egg roll surface(we love garlic flavored olive oil)

Instructions

Instructions For Air Fryer: (Skillet Frying Directions In Notes Below)

  1. Preheat air fryer to 375ºF.

  2. Mix all ingredients in a large bowl.

  3. Position an egg roll wrapper to make a diamond shape with point facing you. Add 2-3 tablespoons of the chicken filling in the bottom third by the point closest to you and fold up the bottom corner over filling to align with top corner.

  4. Fold in both sides of egg roll, tucking filling in. Brush all inside edges with oil to help seal the egg roll as you roll.

  5. Continue rolling the filling towards the top point until your egg roll is completely rolled.

  6. Brush oil over the surface of the egg roll (Cover completely, this is what makes the egg roll crispy).

  7. Place each egg roll seam-side down in a single layer in the air fryer. Depending upon the size of your air fryer, you may need to cook these in batches (see regular skillet frying directions in notes)

  8. Cook for 6 minutes until golden brown. Flip and cook another 5-6 minutes until egg rolls are fully brown & crisp.

  9. Remove from the air fryer and allow to cool slightly before serving.

  10. Egg rolls will last 3-4 days in a covered container in the refrigerator.

Recipe Notes

To Skillet-Fry Egg Rolls: Pour vegetable oil about 1” deep into a heavy-bottom skillet. Heat the oil until hot and then fry prepared egg rolls until golden brown, about 2-3 minutes for each side.

Reheating Egg Rolls In Air Fryer: To reheat egg rolls in the air fryer, set the air fryer to 350°F and add frozen egg rolls in a single layer. Air fry & crisp for about 5 minutes, turning halfway through.

Freezing Cooked Egg Rolls: After egg rolls are cooled, place in a single layer on a baking sheet and freeze for 3-4 hours. Then transfer to a freezer bag (be sure to label). Can be kept in freezer for 6 months.

To Reheat Frozen Egg Rolls: Do not reheat cooked egg rolls in a microwave. For crispy egg rolls place frozen cooked egg rolls in an air fryer, crisp at 350ºF for about 5 minutes per side.
