Suzy-Q Brownies is just like those favorite Hostess treats – only better. Made with a boxed brownie mix and a creamy marshmallow filling.

A FUN BROWNIE RECIPE

So, my husband and I got crazy excited when Hostess started making their Suzy-Q snack cakes again. And then were promptly disappointed when they were tinier than they used to be and lacked the old school flavor they used to have in their hay day. Even Twinkies have lost their special taste these days.

BROWNIE MIX AND MARSHMALLOW FLUFF

So I figured – why not make my own Suzy Q’s? I wanted them to be easy to make and I wanted a super-fudgy taste so I decided on brownies instead of cake. And I am using a brownie mix to simplify the whole process. They are a bit messy – not gonna lie – but they are oh so good and totally worth every single bite!

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)

  • boxed fudge brownie mix
  • large eggs
  • water
  • vegetable oil
  • salted butter
  • powdered (confectioners) sugar
  • vanilla extract
  • marshmallow creme (Marshmallow Fluff)

HOW TO MAKE SUZY-Q BROWNIES:

Preheat oven to 325f degrees. Spray the bottom of a 10x15x2 baking dish (also called a lasagna pan) with nonstick cooking spray. In a large bowl, prepare both boxes of brownies (mixing together brownie mix, eggs, water and oil.)

Now this is the hard part – resist dipping your fingers into the deliciousness. Or do it – I won’t tell 😉

Pour the brownie mixture into the prepared baking dish. Bake for about 35-40 minutes until center is set.

Allow brownies to cool completely.

Loosen the edges of the brownie from the sides of the pan with a butter knife. Invert pan onto a large cutting board to release the brownie from the pan.Carefully cut the brownie in half, horizontally (lengthwise.)Note: this is easiest if you spray your knife with nonstick cooking spray. Also, if the edges of your brownie got a bit crunchy, cut the edges off first.

In a separate bowl, prepare filling. Using an electric mixer, cream butter. Then add powdered sugar and vanilla extract. Stir again. Finally mix in marshmallow creme.

Evenly spread filling mixture on one half of the brownie.

Carefully place the other half of the brownie on top.

Then cut into 12 squares

Ingredients

For the brownies:

  • 2 boxes fudge brownies (family size for 9X13-inch pan) (I like Duncan Hines Decadent Fudge)
  • 4 large eggs
  • ¼ cup water
  • cup vegetable oil

For the filling:

  • 1 cup (2 sticks) salted butter, softened to room temperature
  • 1 cup powdered sugar
  • ½ teaspoon vanilla extract
  • 7.5 ounce jar marshmallow creme

Instructions

  3. What size brownie mix did you use? The 9×13 size or the 9×9 size?

    1. Hi Heidi! I show the ounces for each box that you should use. Basically, you’ll get the standard brownie box for an 8×8 baking pan.

    Hi Brandie . . . . Just a quick question regarding the “cook/bake” time . . . Under one of the pictures it says to bake 35 to 40 minutes but on the actual recipe header it says that the cook time is 25 minutes and in the actual verbiage of the recipe it also says 35 to 40 minutes. I have them in the oven right now ???????????????? so i am just going to keep an eye out. I just wanted to mention it. Also, to say I LOVE your recipes/blog, etc. would be a humongous understatement !!!!!!!!!!! Thank you for your time & talents. Linda, Whitefish, MT
