It seems like there’s a dearth of Instant Pot shrimp recipes out there (and Instant Pot seafood recipes in general), so I just made this Instant Pot shrimp and rice (and beans!) recipe and couldn’t be happier.

Not only is it possibly the easiest Instant Pot recipe I’ve made to date, but it tastes delicious and mixes things up in your Instant Pot repertoire from the usual chicken and roasts. And if you’re looking for Weight Watchers shrimp recipes, you’re in luck because this dish has only 5 points per serving.

Ok, so I fibbed a tiny bit. I could be happier with this Instant Pot seafood recipe if I’d used better quality shrimp so I’m going to tell you that upfront and you can use what you please.

I used pre-cooked, frozen medium shrimp from Aldi since that’s what I had on hand, but I think if you used raw or cooked (but still frozen!) jumbo shrimp, this Instant Pot shrimp recipe could be taken to the next level. Shrimp cooks so quickly, that you want to make sure it’s frozen before you put in it in your Instant Pot, otherwise it will be overcooked.

Since I don’t really keep limes in the house (or fresh cilantro on this particular day) I used a couple of shortcuts that you can copy and turn any of your Instant Pot shrimp recipes into practically a pantry meal as long as you have shrimp in the freezer.

Shortcut #1Young Living Lime Vitality Essential Oil

YL’s Lime Vitality Essential Oil is versatile! I use it in several recipes that I make regularly when I don’t have fresh limes on hand. Lime zest works just as well if you aren’t oily.

Fresh cilantro is cheap and easy to come by, but when it’s lunchtime and you’re starving and don’t happen to have any on hand…this freeze dried option is a live-saver! Get some and keep it with your spices for whenever you’re hangry and don’t want to make a trip to the store. Anyway, you came here for Weight Watchers shrimp recipes and it’s time I delivered one:

Weight Watchers Instant Pot Shrimp

Ingredients

  • ¼ cup butter
  • 1 cup long-grain rice, rinsed
  • 2Tbsp minced garlic
  • 1 ½ cups water or broth
  • 1 can black beans, rinsed and drained
  • 1lb Frozen Shrimp (raw or cooked, just make sure it’s frozen)
  • 15-20 drops Young Living Lime Vitality Essential Oil
  • Fresh or freeze dried cilantro
  • salt and pepper to taste

Directions

  1. Set Instant Pot to “saute” and melt butter
  2. Add rice and cook until brown
  3. Add garlic, salt, and pepper and cook until fragrant
  4. Add water and lime oil, then beans and shrimp
  5. Set Instant Pot to manual and cook for 5 minutes
  6. Release the pressure manually and serve dish topped with cilantro

      I release manually. Can you be more specific about how the recipe didn’t work for you? Was the rice or the shrimp over or undercooked? I make this shrimp recipe regularly and can help you troubleshoot.

    I ended up with soup.are you supposed to cook the rice first or put it in the InstaPot to cook in the broth (I used broth instead of water)?

      The rice cooks in the Instant Pot with the shrimp and other ingredients. You only brown it a little on “saute” function before adding liquid. What kind of rice did you use? Long grain rice that has been rinsed is your best bet. I’ll update the recipe in case anyone else has run into this.

    If not using the “Lime Essential Oil”, how should I season with real lime…juice/peel?

      I just skip both as the lime oil is flavorful enough on its own.

    just water, rice and olive oil, then spices and shrimp
    Set Instant Pot to rice and cook for 5 minutes
    Release the pressure manually and serve dish with ginsang bagoong.
