Lavash bread makes a thin and crispy pizza crust. It works well as an appetizer, lunch, or fun weeknight dinner. This is a dairy recipe that fits with a dairy menu on Shavuot, or the recipe can be made vegan if you use vegan cheese. Keep this quick, easy recipe in mind when you want pizza fast.

In addition, pizza is a popular food for breaking Passover (to start eating bread again) after Passover ends. Or if it's during Passover and you're craving pizza, make my Matzo Pizza.

This recipe is all about customizing your own pizza, so it's ideal for picky eaters or different dietary restrictions since everyone can pick their own toppings. It's especially easy when you use leftover vegetables or chicken which are already on hand.

Dana's Note:"Make Your Own" Pizza Night is a family favorite at our house. I set up a bar of different cheeses, vegetables, herbs and toppings along with Trader Joe's pizza sauce and pesto sauce. Having everyone top their own pizzas is an easy way to accommodate different diets and palates within the family.

What is Lavash bread?

Lavash bread is a Middle Eastern bread that is soft and thin. It's an unleavened bread, and usually comes in large, flat sheets. Lavash is typically made without any additives or preservatives.

It is a versatile bread and can be used in the same manner as a tortilla or naan. Lavash can be used served with dips, can be make into wraps with sandwich fillings or can be the base for pizza like in this recipe.

It should be available at most grocery stores near the bread or Middle Eastern cuisine. I like using the whole wheat lavash from Trader Joe’s.

The measurements and ingredients are a general guideline for this lavash flatbread pizza recipe.

  • Lavash bread - I like the Trader Joe’s whole wheat lavash bread. If you can’t find lavash, you can always use store bought pizza crust or dough. An alternative base to use is a baguette, sliced open and toasted. You will need 1 lavash bread per adult, and ½ per child.
  • Sauce - Go for a traditional pizza sauce, or change it up with pesto sauce, barbeque sauce, or peanut sauce.
  • Shredded cheese - Use mozzarella or a vegan variety. You can also use fresh mozzarella.
  • Toppings - The ideas are endless here! I like a combination of fresh vegetables, fresh herbs, and shredded cooked chicken.

This is a versatile and forgiving recipe. Everyone can top their pizza as they like it, and there’s really no need to measure. Each sheet of lavash pizza serves 1 adult. A half sheet is a good size for a kid.

STEP ONE: Preheat the oven to 375ºF and line a baking sheet with foil or parchment for easy clean up.

STEP TWO: Brush olive oil onto the lavash bread, and bake for 4-7 minutes, until golden brown in some spots with crispy edges.

It should be getting firm and not too floppy.

STEP THREE: Next add a few teaspoons of sauce, cheese, and the toppings.

STEP FOUR: Place back in the oven for another few minutes until the cheese is melted and toppings are hot. Serve immediately.

I recommend serving these lavash pizzas with a light salad.

Top Tips

  • Pre-bake the lavash bread for a few minutes to crisp it up before adding toppings. This helps it to stay crisp and prevent it from getting soggy.
  • Another way to help prevent soggy pizza is to go lighter on the sauce than you would a regular pizza.
  • Don't overload with too many toppings because the crust is very thin.
  • Fresh herbs take the pizzas to the next level of deliciousness!

The topping combinations are endless with this recipe! Here are a few of my favorite ways to top these pizzas.

  • Basic: jarred pizza sauce, shredded mozzarella cheese, basil
  • Mediterranean: pizza sauce, dried oregano, shredded mozzarella, black olives, red onion, bell peppers
  • The Gourmet: heirloom tomato sauce, sliced buffalo mozzarella cheese, fresh basil
  • Thai chicken: peanut sauce, leftover shredded chicken, broccoli, cheese, cilantro
  • Fall Favorite: pesto sauce, roasted diced butternut squash, cheese
  • Barbecue Chicken: barbecue sauce, leftover shredded chicken, any green veggie, cheese, cilantro or basil
  • Vegetable: pizza sauce, cheese, basil, and a sprinkle of vegetables like asparagus, zucchini, eggplant, broccoli, or mushrooms
  • Pumpkin: pumpkin sauce, mix of winter vegetables, feta cheese, small sprinkle of dried sage
  • Spicy: Add red chili flakes to any of the above for a bit of spice

Make Ahead

I don’t recommend baking the whole pizza ahead of time, but you can easily prep the ingredients the day before or morning of. Chop and store ingredients in small containers, and then pull them out right before assembling and cooking.

The day of, you just need to crisp up the lavash, top and then melt the cheese.

Storage and Reheating

How to store: These pizzas are best eaten right away. Leftovers can be stored in an airtight container in the refrigerator for 2-3 days.

How to freeze: I do not recommend freezing these lavash pizzas.

How to reheat: To reheat the pizzas, crisp back up in the oven or toaster oven until warmed.

Ingredients

  • 1 9" x 12" sheet of lavash bread
  • 1 teaspoon olive oil
  • 4 teaspoons sauce like tomato, pesto, barbecue or peanut
  • cup shredded cheese like mozzarella, fresh buffalo mozzarella, or vegan
  • ¼ to ½ cup cooked vegetables or shredded chicken, or both
  • 1 teaspoon julienned fresh herb like basil or cilantro

Instructions

  • Preheat oven to 375ºF. Line a cooking sheet with foil or parchment for easy clean up.

  • Pour olive oil in a small bowl, and using a pastry or basting brush, brush oil across one side of the lavash bread. Cover the whole surface with a light amount of oil. Put lavash on cookie sheet, oil side up. Crisp bread in the oven for 4-½ to 7 minutes. Watch bread so that it doesn't get too done. Bread should be lightly brown in some spots and a little firm, not too floppy. Remove from oven.

  • Put desired toppings on crispy bread; see article above for ideas. Start with a brushing of sauce, then sprinkle cheese, vegetables, chicken (optional), and herbs.

  • Place in oven for 3-½ to 6 minutes until cheese melts. Serve immediately.

  • This recipe is for 1 lavash pizza, scale up as needed.
  • 1 pizza serves 1 adult, ½ pizza is a good serving for a child.
